Amazingly Good Black Bean Brownies

I love a good brownie. Especially one that's packed full of protein, no refined sugars and is gluten-free. I know these may sound odd, but they are amazing! I made these pretty simple, but you could jazz up the flavor profile by adding cinnamon, walnuts or pecans, a little espresso powder or even cayenne… or a little powdered sugar. ;) These would also be amazing with my vanilla-banana Ice "cream"




Black Bean Brownies

You'll need… 


2 c cooked black beans
3/4 c coconut sugar (or maple syrup/coconut nectar)
1/2 c cacao or cocoa powder
1/2 c oat flour (preferably soaked for a few hours and rinsed, and GF)***
3/4 c nut milk
1 tsp vanilla bean powder or extract
1/2 c applesauce
1/2 tsp baking powder

1/4 c chocolate chips (optional topping)

*you can grind rolled oats into a flour in your blender 

Lets get started!


Preheat your oven to 350*. "Grease" a medium sized baking dish with coconut oil. Pulse all ingredients in a food processor until smooth (around 5 minutes). Pour mixture into prepared dish. Top with chocolate chips. Bake for 18-20 minutes. Allow to cool for 5-10 minutes before slicing.
